They were overloading the document. Reverts the beautiful-mermaid
diagrams added in 722bd6c.

Three Mermaid diagrams styled for beautiful-mermaid (tokyo-night):
system overview (flowchart), data model (ER diagram), and expense
approval flow (sequence diagram).
