inputs/nixpkgs: bump to 0af3d140

The locked e8be7818 has no cached stdenv: its linux-headers-6.18.7 no-relocs.patch fails to apply, so every build bootstrapped stdenv from source and failed. 0af3d140 (2026-09-05) is fully substitutable.
